As a mother of many who actually cooks most of our meals from scratch, I appreciate cookbooks that are well laid out, have readable text, offer tasty and nutritious recipes that are easy to use and won’t cost me an arm-and-a-leg. My ideal cookbook will be fun to flip through, have recipes that are made with pantry ingredients, offer me meal options that won’t take me long to prepare, be easy to navigate and help me to cook meals that my family will love.
I think I’ve found that book.
Beyond Macaroni and Cheese by Mary Beth Lagerborg (of Once-a-Month-Cooking fame) and Karen Parks, offers Moms many practical, husband-and-child-friendly, easy-on-Mom recipes. Though the recipes are not low-fat, low-calorie or low-carb, it is because they aren’t meant to be. This isn’t a healthy eating cookbook by any definition (though many of its recipes can easily be adapted to be healthier); instead, it does what it set out to do: offer up many, easy-to-do “Mom Approved, Kid Tested†recipes.
Often I will pick up a cookbook thinking I’m going to like it only to be put off by its style or content. Not so this time. This one’s a keeper.
DISCLAIMER: I received a copy of this book for free from Zondervan for purposes of review. I was not required to give a positive review, only a fair and honest one. My opinions are my own.

An excellent resource for busy mothers! These recipes are perfect for growing families - they are the favorite recipes of moms and families, tested and approved. I love that the ingredients are not only things I've heard of before, but things I have in my house! I've bought it as a gift for friends as well. Can't recommend it highly enough!
